artichoke, (Cynara cardunculus, variety scolymus), large thistlelike perennial plant of the aster family (Asteraceae) grown for its edible flower buds. The flesh at the base of the thick leathery bracts and the receptacle of the immature flower head, known as the heart, are a culinary delicacy. The artichoke’s flavour is delicate and nutlike, and the smaller heads, or buds, are usually the most tender. Artichoke heads are commonly boiled or steamed and served as a hot vegetable with a sauce or as a cold salad or appetizer. Artichokes are a rich source of potassium, vitamin C, and dietary fibre.

Prior to cooking cut the stem and the top off. Pull off the bottom pedals. Cut the pointy part of the pedals off. Boil, steam, or pressure cook. Let cool until you can touch easily. Pull the middle and choke out. Spread the leaves, douse with olive oil and parmesan between the leaves. Put mozzarella and bread crumbs topped with a little olive oil in the open middle. Bake until cheese is melted and arty is heated back up. Serve with clarified butter.

We add fresh lemon juice, then toss in the lemons, add salt to the lemon water. The artichokes are cut down the middle and the furry choke removed. Do NOT eat that part!! Also, remove the bottom two layers of petals. Then place artichoke halves in lemon water and cook til tender and drain. We dip in butter or hollandaise sauce. 😋😋❤️❤️‍🔥

I love artichoke. Never seen it done this way. And you're right. They are intimidating to cook. You made it look easy. I watched this several times. Awesome.

You can eat the stem too you just peel off the outer layer. Taste just like the heart. We used to eat ours with mayonnaise

Broooo so I love artichokes and for years I would get sick after eating them but time and time again figured I got food poisoning by something else I had eaten in the same day… Come to find out I’m actually allergic to artichoke 😫 but I love artichoke 😩

I finally ate artichoke for the first time in my 30’s and loved them. They make great dip dishes and salads if you know how to prepare them.
