I just wanted to compliment your editing. The way you show shots of performing various tasks as you describe concepts is incredible. No other YouTuber pulls this off like you do. We either have to watch them talk or work in silence. Your videos are rarely silent, and always active. Really great work mixing things up like this. It makes for a very enjoyable experience.

Funny story., many years ago I tried roasted beets, it was the first time I had tried beets any other way than pickled. I loved them so much I must have eaten 4 or 5 of them, they're delicious.
The next day of course I had forgotten that I had eaten them with dinner and while taking care if my "morning business" thought I had massive internal bleeding due to the color left in the porcelain.

As a chef, my tip is to leave a few centimeters of roots and stems on your beets. This reduces colour bleed when you boil or bake them. Unless you want the colour for some other purpose of course, then chop them off.

Good day Mark. You forgot one more tip: beets prefer alkaline soil and therefore really like ash. I just put ash from wood burning around beets and they grow bigger and better then without it.

So, I came across this video because my son has been begging to grow beets and I wanted to do research, and now I think he's going to get his beet and carrot garden this year. Gotta love when kids want to get in the dirt 🥰

Beetroot is loaded with the antioxidant lycopene, which is great for prostate health.

Make a chocolate cake the way you would a carrot cake, swapping the carrot with beetroot. YUMMY!

Borshch/borsht/barszcz is a great soup and there are more variants to it than a cat has hairs- with and without meat.

Stir fry the leaves with a chopped chilli, garlic and some chopped ginger. Turn down the heat and let steam for a couple of minutes. Food of the gods. Roast the beets on a bed of star anise, peppercorn fennel seed or whatever fragrant seeds you have, add some goats cheese once the beets are warm and drizzle over olive oil and balsamic; you need nothing else

Here in Ukraine it's one of the staple veggies, grown in massive amounts. It's really cheap and is used in traditional cuisine. The one way we usually don't eat is pickling, haha.

Love the colour of beets Mark as much as the colour of blackberries, don't forget that store bought beets can be planted and they will keep growing if you keep chopping their tops off for salad, a better place to store them is in the ground I have found instead of my fridge when I buy them from the farmer's markets with their roots and tops in tack, then I just pick at my own leisure to use...
