Season 8, just wanted her to become the ultimate villan because the plot needed it. Same reason why Rhagal died and Daenerys was unharmed from the scopians. Same reason why scopians became useless in burning of Kingslanding. However, once she became fully a villan, Jon just kills her off as if its that easy. This is why people were not happy with Daenerys going crazy because the process just had holes. If people studied dictators before they know how paranoid and cautious they are, they are surrounded by guards, have people taste their foods before they eat so don't get poisoned. They changed her storyline during editing, initially it was Daenerys flying straight to Red Kep which made sense and as she burns the gates, this triggers the wild fire under the city and is what kills everyone which made sense. Cersei knew that she made Daenerys pissed and if Cersei losses the battle she knew she'd dead so she makes Daenerys suffer one final blow. It's the reason why we don't see Daensys face durong the burning and it makes more sense. Daenerys doing this makes more sense cause in the past she has been vengeful to people who done her bad and this shows the consequences as that she needs to shoe mercy. However they changed this ending because this was during editing and I think her dying by Jon Snow for reason which wasn't really her fault would be been not clear.
