Recipe:
· 2 Chicken Breasts (cut into bite size pieces)

Brine
· 2 cups Milk
· Juice of 1 Lemon
· 1-2 Tbsp Salt

Flour Dredge
· 1.5 cups Flour
· 1.5 cups Cornstarch
· 2 Tbsp Granulated Garlic / Garlic Powder
· 2 Tbsp Onion Powder
· 1 Tbsp Cayenne
· 1 Tbsp Paprika

Wet Dredge
· 1 cup Buttermilk
· 2 Eggs

This is a good simple recipe, but I do have one suggestion, dry off the chicken (a bit) after it comes out of the brine. I found that if I leave the chicken "wet" the breading comes off too easy after deep-frying it, when you are eating it. I too like a heavily seasoned flour, been doing it for a long time. The brined chicken is tender and has a good flavor, combined with the crunchy deep-fried outer coating, it's a very good bite, restaurant quality in my opinion.

I am always worried about chicken being cooked fully, so is it a good measure when it floats to the top as I don’t want to pierce them to take a temp reading to see if they are done. 😊🌵
