If it hadn't been for the canning ladies of YT I would have quit before I got started back in the fall of 2020 w/ 90% fail rate with Ball lids that came w/jars took the advice and switched lids For jars saved the day. Still learning & canning. Thank you

I don't use the gauge at all. I never was able to get it to stay at 10-11lbs. I switched to a jiggler only. The gauge needs recalibrated yearly. Maybe i just got a bad gauge. You can't store your lid upside down on the canner because the moisture will mess up the gauge. Guess how i found that out! It wasn't a FOR JARS canner but a presto one with a gauge...i don't think I'll ever use a gauge again. I like the sound of a jiggler better than watching the gauge all the time. I can immediately tell by the sound if something is wrong....thats just my personal thoughts on a gauge. Some people love them. I guess it kind of depends on what you start out canning with.
Ground beef is something that Scott just says no to canning it. I think it would be a great convience to have on the shelf! Good thinking getting more ground beef while it's available at a good price because NOTHING is going down in price! I do hope you get your side this week. It's getting ridiculous!

I'm working on a case of bananas. Making jams, bread, muffins, cookies & will can some to use in recipes later. Then on to 50lbs of carrots & 30 lbs of potatoes.

I canned ground beef - however, the texture/taste was not to our family's liking. I do, however, pressure can any & all other chuck, stew, etc. beef I can find. My hubs LOVES beef & noodles! Thanks for being you! 🙂

I'm making and canning apple sauce and apple jellies. I couldn't pass them up for free 6 bags. I want too can pinto beans next. But I also have too pick up some free hosta plants from niece a sure bless for her too share with us all.

Hey Bev, I am a seasoned canner, but I am weird about canning ground beef. Can you please describe the taste and texture of your ground beef the next time you do a video? I’ve used ground beef and chili and spaghetti sauce and the little bits of ground beef tend to turn into mealy bits of beef and lose the bouncy texture of ground beef. I’m wondering what the chunks taste like when canning and chunks - any help you can offer would be wonderful. Ty.

I think I would like pre cooked, meat opposed to the raw chicken, method. That is a beautiful canner.

It must make you feel better now that you have some beef back on your shelves. I know when I’m starting to run low I get a little antsy I start looking for sales. That meat looks wonderful. 😊

Everyone thinks i'm maniacal for chasing cheap meat and vacuum sealing ( chamber vac sealer, totally worth the $$- bags are cheap and you can seal liquids as well. Mine is from a US based small business called Avid Armour) and freezing or canning a bunch of it. People will get it soon enough though because it is not going to come back down in price.
I base my weekly menus (mostly food prep on Sunday) on what is on sale. I love turkey or chicken tetrazzini but i don't make it when mushrooms are $4/8 oz lol
Also, I looked at your hair. I did not turn into a pillar of salt, so what's the big deal?

ForJars said they would replace the racks when they became available. I've had their canner for 5 months and haven't received them. Guess I will have to contact them again.
