One Stew, Four Hidden Vegetables, Three Kid Friendly meals #africanfood #plantbased

It is back-to-school season, which means prepping for kid lunches (and adult lunches too) Tomato stew is the gift that keeps on giving. It can serve as the base for many West African-inspired meals and can be a great way to pack in a ton of vegetables without you really knowing.

In this video, I shared a few ways I like to use this stew and currently have containers of it frozen in my fridge. With my homemade seasonings, you can whip up countless yet tasty meals very quickly. The full recipes are on my blog.

That's so upsetting that people get teased for having "different" food. I guess I am lucky for growing up in a part of new zealand where I was the minority as Pākehā and was very used to kids bringing all sorts of foods to school, if they were from sri lanka, china, korea, samoa, tonga, and elsewhere (like my own immigrant parents, jewish-irish mother and swedish father). I got a bit of flack for bringing a lot of fish and seaweed dishes to school but people always like latkes when they try them, luckily, but I guess I was pretty privileged to grow up in such a place. thank you for sharing these dishes and your insights!

Im Haitian and I had one particular co worker act like my food stank 🙄 she had nothing to say when the coworkers had stank fish that smelled really bad

I’ll never forget I had a dish with avocados one day and this was well before it was cool. “Eeew what’s that green thing!” Hah I’m sure they’re having it for brunch right now 🙄
Don’t get me started on plantains or beans or our greens stew either. Those unseasoned kids were terrible!
