Follow @tnstyled for lots of easy ideas like this one! This is the perfect weeknight dinner. It comes together so quickly, has tons of hidden veggies and I can confirm it’s toddler approved! You can also switch up the veggies in here very easily. I used mushrooms, onions, celery and carrots!
Ingredients:
2 tbsp avocado or olive oil
1 lb ground beef (or turkey)
1 white or yellow onion, diced
6-8 baby Bella or white mushrooms, diced
4 stalks of celery, diced
1/2 cup carrots, diced
1 tbsp minced garlic
salt and pepper to taste
1 tbsp Italian seasoning
3 tbsp tomato paste
1 14.5 oz can crushed tomatoes
1 14.5 oz can diced tomatoes
4 cup bone broth
1 16 oz box rotini (for a more soupy pasta use half)
Directions:
chop all veggies (i find it easiest to use my chopper) and heat oil in a large dutch oven. Add the beef and cook until brown.
Take out any fat and add in the veggies, garlic, seasonings + salt and pepper. Cook for 5 min until soft and add the tomato paste, diced and crushed tomato. Cook for 2-3 min and add broth.
Bring the broth to a boil and add pasta. Cook according to package (7-10 min for rotini usually) enjoy!
