My mom and I do this every year after we get a big harvest of tomatoes from our garden and it’s SO GOOD. 10/10 would recommend.

Fyi for anyone who's adding cream or milk to this, dont let your dairy boil! It's an end of recipe add on after the heat is reduced or turned off. Maybe I'm the only dummy here that didn't know that, but I've been cooking for 30 years and just learned why my potato soup (or other creamy soups) never turned out quite right 😂

3lb tomatoes
1 yellow pepper
3 bulbs garlic
2 onions
1 tsp salt
1 tsp italian seasoning
olive oil

Roast at 200c until roasted😅 mine took 40 minutes ish

squeeze out the garlic

Blend using a blender, then add to a pot.
If youre using an immersion blender you can blend it while in the pot.

While in the pot on low heat, add:
1/4 cup of fresh chopped herbs (thyme, rosemary, basil)
1/2 cup fresh parmesan
1/2 cup heavy cream
salt pepper, adobo to taste

Top with heavy cream and parsley

You know, in the old days, we were instructed to cut smaller then a fine chop Bake, Broil, then pot cook while mash chopping on a simmer until completely smooth and finish with a cheese cloth. Now immersion blenders. 😆

The reason her texture of her soup is like that instead of smooth and creamy is because she added the heavy cream to boiling soup. Immersion blend the soup than turn it off and remove from heat before adding heavy cream.

If you don’t want to fire up the oven, you can roast the vegetables in an iron pan without butter or cooking oil. You’ll still get a char and then you can add the olive oil and spices. I then added it to my blender. Much faster and less cleanup. Especially during the summer when it’s already hot. 😉
