EASY KETO LEMON BARS WHEN YOU CRAVE A KETO DESSERT

I love lemon bars! The sweet and the tart together...so good. In this video, I show you how I make a keto lemon bar. I designed them to be more on the tart side because as you become more keto adapted, you don’t have the sweet tooth you once had. But if these keto lemon bars are too tart for you just back off on the lemon juice or add more sweetener.

These low carb lemon bars are very easy to make. The filling is made in one bowl (no preheating required) and baked in the oven for 20-25 minutes.

The crust on these lemon bars has a little extra crunch from the coconut flakes. Don’t worry if you don’t like coconut. You hardly notice any coconut flavor from the flakes. It’s just there for crunch and texture.

With Spring here and Summer approaching, definitely add this keto recipe to your keto dessert line up!

KETO LEMON BARS

the crust.
1 ½ cups almond flour
¼ cup Swerve, or favorite sweetener
½ cup coconut flakes, unsweetened
4 tablespoons (½ stick) melted unsalted butter
½ teaspoon salt
1 teaspoon lemon zest

In a small bowl, combine all the ingredients for the crust and mix until combined. Press into a greased square baking dish. Bake at 325 for 10-12 minutes.

the curd.
4 eggs
1 ¼ cup Confectioner’s Swerve
¾ cup of lemon juice (if like it less tart, try ½ cup)
1 Tablespoon arrowroot powder
1 teaspoon baking powder
Pinch salt
Zest from one lemon

Mix ingredients for the curd in a bowl. Pour on top of cool crust. Bake at 350 for 20-25 minutes. Dust with powdered Swerve.

YUM-er-ama!!! Out of all the Keto Lemon 🍋 Bar recipes I chose yours, because I loved your idea of adding coconut to the crust to give it a little crunch. (I used a little more melted butter (6T) my crust needed little more moisture, and added 1 T melted butter to the lemon curd mixture, then put them in the freezer for 10 min to firm up.). They were delicous! My hubby and son loved them to, they gave them an A+. If you knew them, that’s rare. We’ve been on Keto since last July... I’ve lost 75lbs., My DH - 30, my son - 30lbs. We feel absolutely amazing. My thinking is if I can make a treat that tastes as fabulous, is this low in carbs and with no sugar, WHY in the heck would I EVER go back ? I am forever a Keto fan. Thank you 😊 so much for your recipe!

You should put some baking paper in your baking dish before starting off,
{put a bit of spray oil in baking dish first, to make baking paper stick down, and also spray the top of baking paper too, before putting crust mixture in}
leaving a couple of inches or so flaps sticking out, so you can just lift the whole finished product out of the baking dish when it's finished baking, and when it is cooled.
You just lift the whole lemon bar tart out of the baking dish, using the baking paper flaps to hold onto, and it's easier to cut it into squares and lift the squares up as well.
Just a little tip I saw someone else do on here, which I thought was a great idea. By the way, you do a great job. 👋😊
