EASY KETO LEMON BARS! How to make Keto Lemon Bars! ONLY 3 NET CARBS!

Yields: 8

Ingredients;
For the Crust:
3 tablespoons of softened butter
1 cup almond flour
1/3 cup granulated sweetener
½ teaspoon of vanilla extract

For the Filling:
¼ cup of butter
¼ cup of almond flour
¼ cup granulated sweetener
⅓ cup fresh lemon juice
½ teaspoon of vanilla extract
2 tablespoons of grated lemon zest
1 egg yolk
2 eggs
¼ teaspoon of xanthan gum
1 teaspoon unflavored gelatin

Directions:
For the crust:
Preheat the oven to 350 degrees.
Melt the butter in the microwave
Add the almond flour, sweetener, and lemon zest, vanilla, mix until fully combined.
Press the dough evenly along the bottom and line the pan with parchment paper or foil first, then you can lift them easier.
Bake for 10 minutes.
Remove and cool while you make the
For the filling:
Melt the butter in a small saucepan on low heat.
Remove from heat and whisk in sweetener, lemon juice, and lemon zest until dissolved.
Whisk in the egg yolks and return to the stove over low heat.
Whisk continually until the curd starts to thicken.
Remove from the heat and strain into a small bowl.
Whisk in the xanthan gum and gelatin until dissolved and smooth.
Pour the filling over the pre-baked crust and spread out evenly to the edges of the pan.
Bake the bars at 350 for 15 minutes.
Remove and cool.
Sprinkle with Powdered sweetener

Parchment paper hint: crumble it in a ball.. then pull apart and lay flat :) Works like a charm and no worries of it rolling up

My mom absolutely loves Keylime so I switched the lemon ingredients for key limes. I squeezed and zested them myself LOL! I usually make stuff from a box so it made me feel like a real pastry chef LOL! It was absolutely delicious. I made a double batch of the filling and put it in a 10 inch spring form pan. I made the same amount of crust as the recipe calls for. She could not believe it was sugar-free, low-carb and gluten-free. Thank you for this awesome recipe!! ❤️❤️❤️

I LOVE lemon bars! It’s amazing how you really don’t miss out when you do a lowcarb, sugar free lifestyle. When I first did Atkins when I was 18 in 1992, there wasn’t much in the way of recipes. We made sugar free jello and topped it with heavy cream that we whisked up in a cold metal bowl. That was my Mom & mine’s dessert back then.🥳😂

I made Lemon-Rasberry bars, added about 6 fresh tart rasberries to the lemon filling, gave some nice color and that hint of rasberry tatse!
