Keto Lemon Bars are in my opinion one of the best keto desserts you can make in the summer. Mostly because these low carb lemon bars are refreshing, tangy, and perfectly chewy. Literally, lemon bars are what summer tastes like on your tongue...atleast on my tongue. And my favorite thing about these healthy lemon bars is that each one has just 3 NET CARBS!

3 tbs Butter melted
1 Egg yolks
1/2 tsp Vanilla extract
1 c Almond flour
3 tbs sweetener
Bake for 10 minutes at 350
3 eggs
3 juiced lemons
Zest 1/2 lemon
2/3 c sweetener
1 c almond flour
Bake for 20 min
Chill then sprinkle with sweetener

Excellent recipe! If you want to up the wow factor you can mash together fresh raspberries and chia seeds and let it sit until thickened. Then add that mixture on top of the lemon layer. Go even a step further and double the original crust recipe. Use half as a base layer as shown in the video and the other half as a crumble on top. Ultimately, it would be: almond base, lemon layer, raspberry/chia layer, almond crumble. Tasty! (But the macros would be different.)

If I may advise, allow the butter to sit in room temperature 4 hours before making the bars, so that the butter soften. I think it is butter than microwaving it.

Made these today. Only thing I did was baked for 30minutes instead of 25.
Oh. My. Goodness.
Hands down, best keto dessert! I topped it with some whipped cream and was floored.
Definitely want to let this chill in fridge for a few hours. It wasn't as good still warm. Totally worth the wait! Just melts in your mouth. Usually keto treats have an overwhelming almond flavor from the almond flour and are really gritty. This isn't.
I can imagine these even being delicious after freezing them a bit and again, topping with whipped cream.
Shared with a couple friends and they adored it! Even my daughter loved it!

Blue Diamond is the lumpiest almond flour I've ever used. I'm now using Great Value from Walmart, same macros as the big brands, but it's super, super fine and doesn't clump up.

these were so good and easy to make! I even topped with my own glaze (stevia confectioners mixed with water until desired thickness and topped on lemon bars)! highly recommend :)

Excellent stuff my wife and I are getting into keto and I’m looking up recipes where she can have a little sweetness cause she misses that the most. I’m trying to do my best to understand what the keto diet is all about and also looking on recipes that deliver. I’ve come across your videos here on yourself chef and I gotta say I’ve made your peanut butter mousse twice already so huge thank you for that! So I trusted that there would be good as well. I have the crust cooling on the stove and curd is waiting to be added then placed back in the oven. I want it in the fridge cooling so it’ll be ready after dinner.
