You can use a single water source at each end to push sugar cane into the middle for fewer hoppers and a longer farm sugar cane can also be grown on regular dirt or grass

Awesome video. Quick tip for the cow farm, if you put a fence post over the top of the hole once you've loaded your animals in, it will stop you accidentally falling in while still being able to feed them (not that I would over fall into my own farm of course :D )

These are nice and all but I dont usually count it as a starter farm if I cant make it before I think about going to the nether for quartz

Ok, so these farm design are super simple and super basic but they do work for the most part. The cow one is a little odd but seems to work well enough. I personally would have explained that once you have enough cows to open up the trap doors allowing the babies to fall down, you will not be needing to close them again. Just feed the cows and the new babies go where they need to (just remember to turn off the lava until they are down there). For the spawner farm to work you need to be within 16 blocks for the spawner to be active so keep that in mind when you are afk. Also, a campfire over the hopper kills the mobs just as easily without having to play with lava. The most useful simple farm I saw in this video was the slime farm. Add in a way to collect the slimeballs automatically and it will do the job with little worry.

Also, on the sugarcane farm, couldnt you put the water in a hole underneath the block that the piston is sitting on? That way the sugarcane grows but you dont have to go diving every time because it falls in the water..

Don’t you need Nether Quartz for an observer? I don’t know if they’ve changed that, but I wouldn’t call that a ‘Starter farm’ because by the time you can get a single piece of quartz, you’ll be like halfway through the game, unless you got incredibly lucky with a ruined portal.
