For those on Bedrock and not using dispensers, you can put pistons with gravel on top. Works the same as the trap doors.

For Those Who Arent on bedrock you can use sticky pistons to grab the trapdoors and the water will flow out, also put redstone on top to make all of em go up

For the infinite fuel farm, you can use dried kelp, but instead directly smelting it, make blocks of it. This is super helpful
Btw you will need to smelt kelp in the beginning ;)

Trap doors weren't holding the water back so I used upside down sticky pistons to push blocks down. Redstone to Red torch and button works perfectly.

Question: the first foodfarm, why does my water run through the oak trapdoors? I placed them like the video says, but as soon as I place the water behind it, it flows right through the trapdoor
