My Biggest Regret

For me there were three stars of the show. The first being the bacon jam. Every time I make it I wonder why I don’t make it more. It’s essentially just a bunch of caramelized onions, bacon, and maple syrup cooked down with some vinegar and chili peppers for balance. I find myself eating it by the spoonful when I make extra.

Next is the roasted garlic bread. I’m a firm believer that garlic bread should be used more often as something beyond just a side dish, it’s a great way to take sandwich bread to the next level.

Lastly is the chimichurri. I used it as a quick marinade for the picanha, and also as a sauce at the end. Chimichurri is by far my favorite steak sauce (pretty much the only steak sauce I like), and I highly recommend experimenting with it.
