I grew up in Northern California and my grandmother had several persimmon trees on her farm. She used to make so many things with them. Jams, cookies and pies. I love to eat them like an apple. I don’t have access to my grandmothers trees any longer and wow they are expensive now to buy. So I only get them once in awhile.

Persimmons vary widely. Some are so tart they would take the skin off you mouth. Others, well, the less astringent varieties, can be eaten raw as you discovered. Generally a good idea to let them to ripen until the pulp inside has the consistency of something that comes out of a newborn’s bottom and use as a topping.

“Persimmon Pudding Cake” is delicious but, alas, I have lost the recipe.

You smashed it sis, I love them firm and snappy. You can eat them when they’re a deep orange almost red and they’re exactly like jam or pudding! All about personal taste 😊🩵🌼

There’s two types of persimmons one is gooey inside and you sort of have to drink it and the one you have is the other type which is less gooey and more bitter

My Abuela would let them get ripe ripe to the point that I thought it was time to throw them out but the riper the sweeter apparently so I’d say wait to try it when it’s ripe and squishy lol

My mom let them ripen in a paper bag on the counter. I did t like them raw, BUT were soooo yummy as a jam, in cinnamon and raisin cookies, over ice cream and in a chocolate cake that everyone eat without frosting. She never got to frost it! LOL. You can so make candy with it. Just look for recipes containing persimmons on Google. Enjoy!!
