Sieved the egg makes 100% the difference. My water was crystal clear afterwards. It was the best poached egg, ive ever had or seen. I gave it 10/10. Now l can rule the world.

Brilliant.
1. Room temp.
2. Fresh egg.
3. Crack into sieve. 1min.
4. Salt in water.
5. Rolling simmer.
6. Stir till gentlest swirl.
7. Ease egg in.
8. Cook for 2 min. Test.
9. 30 seconds extra.
10. Remove with slotted spoon.
11. Put on paper towel.

I never dared to try this before but after watching your video today I tried it. It seemed relatively fool-proof and it was so easy and so good. Looked exactly like yours. I love it!

I just put the egg in a small bowl, tilt it into the hot water, let the water fill into the bowl and get the whites hardening a little for a second or two, then dump the egg in and it stays together every time

Non-chef here, been making the perfect poached eggs since 1999. 😂 Seriously, by the latter method you used, and I tried every method suggested to me until I rested on this method. ❤

Having been a chef for over 10 years the only two variables in any way people poach eggs that actually makes a critical difference is the freshness of the egg and the draining of the watery whites.

If the eggs are older then thats when i say vinegar is helpful and if also youre doing 20 other things at once the added consistency vinegar gives is nice

A good little side note too, is that once you have strained the eggs off like you did in the video you can actually throw a whole heap of eggs in at once and they wont stick together

I’m obsessed with poached eggs and have tried everything in the books to make them perfect. I do the swirl, but maybe too aggressively. I’ll try this!

I add a splash of white wine vinegar or apple cider vinegar, and stir it in b4 adding the egg in to the moving water… the vinegar helps to solidify the yolk.

Saying “bring the water to a rolling simmer” is like telling me that my stove should be set to low maximum. These concepts are mutually exclusive.
