Three Single Serving HOLIDAY KETO DESSERTS | Stay Keto over the Holidays
The holidays are a challenging time of year when it comes to sticking to your keto diet goals. There are so many temptations - cookies, desserts, carb loaded sides. That’s why I wanted to give you options for single serve easy keto desserts you can make to enjoy when everyone else is having pie or cake.
These holiday keto desserts are for one person...maybe two if you share! All of these low carb desserts for one can be made ahead of time and are portion controlled so you don’t have to worry about going overboard on keto desserts either.
These easy keto desserts are a great option to bring to a holiday party like Thanksgiving or Christmas. Or you can make it for yourself - especially if you are choosing to stay home and social distance but still want to enjoy the holiday flavors.
In this video, we are making a keto pecan pie mug cake for one, a mini keto pumpkin pie, and a single serve panna cotta with raspberry sauce.

KETO PECAN PIE RECIPE
1 egg
2 tablespoons almond flour
2 tablespoons coconut flour
2 tablespoons ChocZero Maple Pecan Syrup
1 tablespoon butter, melted
1 tablespoon golden monk fruit
1/2 teaspoon baking powder
pinch of salt
Pecan Topping
1/4 cup chopped pecans
1 tablespoon cold butter, cut into cubes
1 tablespoon ChocZero Maple Pecan Syrup
pinch of salt
MINI KETO PUMPKIN PIE RECIPE
Crust
1/4 c almond flour
2 t coconut flour
1 T golden monk fruit
large pinch of xanthan gum
large pinch of salt
2 t unsalted butter, chilled and cubed
Pumpkin Pie Filling
1/4 cup pumpkin puree
2 T heavy whipping cream
1 T golden monk fruit
1 t pumpkin pie spice
1/8 t salt
Preheat oven to 325 degrees. In a small bowl, add all the ingredients for the pie crust. Cut butter into the ingredients with a fork until coarse crumbles form. Press crust into a 4 inch mini pie plate. Set aside. In a small bowl, mix together all the ingredients for the pumpkin pie filling. Pour the filling on top of the crust. Bake at 325 degrees for about 20 minutes or until the filling has set and is lightly wobbly. Let cool on a wire rack before eating.
SINGLE SERVE KETO PANNA COTTA
½ c macadamia nut milk, divided (or nut milk of choice)
1 t gelatin
1 T powdered erythritol
4 oz low carb yogurt
¼ t vanilla extract
½ c raspberries
1 T water
1 T sweetener of choice
1 t mined basil leaves
1 t orange zest
⅛ t xanthan gum
In a small bowl containing ¼ cup nut milk, sprinkle gelatin over the top and set aside for 10 minutes to allow to bloom or soak up the gelatin.
When gelatin almost ready, add remaining nut milk and powdered erythritol to a small saucepan and allow to heat up. Stir in gelatin mixture and mix until dissolved. Remove from heat, stir in yogurt and vanilla. Pour into serve dish and refrigerate for several hours or until set up. To make the raspberry topping, add raspberries, water and sweetener to a saucepan. Cook until raspberries have lost their shape. Add basil, orange zest and xanthan gum. Spoon over panna cotta.
