Ingredients
4 slices plant-based luncheon meat (I used Omni luncheon meat)
2 tbsp soy sauce
2 tbsp mirin
1 tbsp maple syrup
1 cup Plant-based liquid egg or 4 eggs
1 1/3 cups warm cooked short or medium grain rice
Furikake
2 sheets of toasted dried seaweed (gim/nori), cut into half as lack tangle shape

Hi Seonkyoung and Jacob🤗. I'm sorry it has been awhile as I have been trying to care for my mother who was diagnosed with Alzheimer's disease almost 2 years ago now. Wow! That’s a lot of rice in your Spam musubi. I like your use of mixed rice. The parents used to make Spam musubi to give to the students in our boys’ marching band after long parades, like the Aloha Week parade. There were more than 100 students in the band so the mothers got together to make Spam Musubi.

Love your spam musubi recipe, but I learned to put the nori down first, so that after I remove the mold, the ends are easier to lift and fold over. You can put the egg omelet down first, the furikake next and the rice on top. I think you can wrap it more tightly. No matter how you layer the ingredients, put the nori down first.

i’m Hawaiʻi, locals place the nori on the cutting board first. Tanioka’s has the best spam musubi.
