I'm a hospitality professional and former competetive athlete. Providing the kind of food these athletes need to compete is NOT rocket science. Eggs, chicken, fish, fruits, salad bars, vegtables roasted in bulk on on sheet pans, grains like quinuoa, pasta dishes, etc. If the quality of the food is this poor, it's because it was not made a priority.

I know first hand. Potted bird meat. Pigeon meat. Horse meat etc. Cant get a real pizza. Best you can get is ham sauce and cheese lol. All separate toppings. Other than that you can have anchovies or some other weird stuff
