This is a classic Italian pastry cream recipe for vanilla pastry cream (also called crema pasticceria or creme pasticcere). It features fresh vanilla bean, lemon zest, milk, cornstarch, flour and sugar.

In addition to showing you how to make vanilla pastry cream (a type of vanilla custard), we'll demonstrate a few ways we've used it as a cake filling.

whole milk - 2 cups / 500 ml / 500 g
egg yolks - around 10 (200 g)
vanilla - 2 tsp extract / 1 vanilla bean
lemon zest - from one
granulated sugar - 3/4 cup (150 g)
cornstarch - 3.5 Tbsp (25 g)
flour - 3.5 Tbsp (25 g )
