Or you can just leave them in your cabinet or pantry for a while and then when you remember you have potatoes they'll be ready to plant

I’ll have to go full tilt with this method this year. Seed potatoes are incredibly expensive compared to a 5 lb bag of organic potatoes from the store.

Great! I was already planning on doing this. I love the bite-sized potato medley which are crazy expensive if you buy them often. So I'm going to Sprouts to pick up an organic bag of them. Im growing in containers which I think will work well for the smaller sized potatoes.

You can cut the potato into even smaller pieces as long as they have eyes ( tubers ) then a potato plant will grow. So from just one potato you can get about 5 plants.

That paper towels going to dry out rather quickly. A day or two at most. If your leaving the potatoes near a window for three weeks, you didnt say but I guess youre going to have to rewet that paper towel. I did this back in dec for my potato planting in Jan zone 10. Only I used hand towels instead of paper towels. They are large enough to cover a good number of potatoes and I just re wet them each day. Wring em completely out. They dont have to be dripping. Worked well for me. Even with the chitting it still takes a couple few weeks before they emerge after planting.

Don't have to do that ..i reckon it's a good idea. I start my seed potatoes in late fall by spring they are more than ready to plant...js

Do you plant the whole potato or just a portion with the eyes?

Don’t believe all the hype about organic foods, vegetables, etc. show me one farmer that does farming on a large scale that doesn’t use some type of pesticide at some point of that growing

Ummm no thanks, certified seed potatoes every time for me . spend the money at planting and the results will out perform any suspect disease risk. just no.

Don't do this if you live in the tropics. You will stink the house out if you keave this on a window sill for three weeks 😂
