Plof Recipe| How to make Plof/ Rice and Carrot/ Things to MAke with Rice/ Bukharian Food/Uzbek Food/ Meat and Rice/ Sonya's Prep

Plof is a dish that I struggled for years to perfect. I now have a fool proof recipe that produces the perfect plof.

Recipe:
2 ladles oil
2 medium sized onions thinly sliced
3 large carrots julienned
3 lamb steaks chopped into large pieces
3 cups short grain rice
2 cups water
1 tbsp salt
1 tbsp chicken consome
1 tsp cumin
1 tsp coriander
Pepper

Hi sonya we do that here in Barbados 🇧🇧 but we call it ( pelau ) and we usually put beef, lamb, chicken and or turkey in one huge pot or we called it (cook up )
It tastes really great and delicious 😋 😍 everything goes into the pot one time it usually comes out fabulous, ,, i love the bottom of it wen or if it burns a little, , ( that's the best part ) keep it coming 👏 👍 😊 😀 😄

Plov is a one pot dish, historically created to feed military troops both in Ukraine and India. In India, this is Pulao (Pilaf) or Biryani, both variations of the same dish. The Arabs brought it to South India, and the Muslim Mughal emperors brought it to North India. Plov and Biryani are essentially the same dish, but Biryani has a rich curry with more spices in it. Its very interesting to see the origins of this dish and its adaptation to every country it found its way to, using local spices and veggies. The fact that lamb or goat is used primarily indicates a nomadic origin with herds of animals on the move in desert regions. Also the fact that only two root veggies are used - onion and carrot further validate that. Both these veggies can last a long time without refrigeration when raw, so you can travel with them. The spices preserve the dish from spoiling - coriander and turmeric (Indian) kill bacteria. The rice blankets the meat and acts as insulation against heat and spoilage.

This is an historically old dish. So glad it is still being made. Its great for warming you up in winter.

fyi - CONSOMME, not CONSOME. Pronounce this as CON-SOM-MAY. It's French. Consomme has gelatin, broth does not. Otherwise they are the same. Your body needs gelatin, so consomme is better than broth. Gelatin is a form of protein containing collagen. Your skin and joints need collagen and the extra protein.

I make something similar but with raisins, its fantastic. So easy to make. It looks very good with lamb!

My Ukrainian husband makes this at home for us in the UK. I’m veggie so skip the lamb but it’s delicious. I think his father who had Georgian heritage, used to make it. He grates the carrot and uses bulgar wheat. I always add tomato paste to my portion which tastes great!

I have never seen this dish before and it looks absolutely amazing! I was like oh so few ingredients I can do that-but your technique! I don’t have that ingredient! Haha one day when I’m feeling brave I will have to try this. Your family is blessed to have you!
