Bolognese is a traditional Italian meat and vegetable tomato sauce. It can be used for so many things, spaghetti, lasagna, or just eat it by itself. Today I’ll show you a simple and easy way to make this iconic Italian classic.

Background: I started working as a hibachi chef when I was 16 at my dads restaurant here in Athens, Ga. Since then I have worked in a handful of different restaurants, cooking hibachi, mastering sushi, and even making pizza!

Ingredients you will need:

1 lb onion
1 lb celery
1 lb carrots
2 lbs 80/20 ground beef
1 lb ground pork
1/4 cup of red wine
2 tbsp olive oil
1 tbsp salt
1/2 tbsp pepper
1/2 tbsp dry rosemary
1 tbsp chopped garlic
2 cans (28oz) diced tomato
2 tbsp tomato paste
1/2 cup whole milk

I’ve made this 4 times now, with some changes the last 3 times to make it my own. Using your great recipe as a base, I made the following changes:

1. Instead of milk, I used 1/4 cup unsalted butter, and 1/4 cup heavy cream.
2. I also added the tomato paste while sautéing the vegetables. Cooking the rawness out of the paste added to the depth of flavor.
3. I used equal parts beef, pork, and veal.
4. I added some sliced button mushroom when browning the meat.
5. I added a teaspoon of MSG, and 3 TBS of sugar. It balanced out all the acidity of the tomatoes and wine.

Dude, I subbed to you just yesterday, after watching some of your older videos, and my only criticism was that the music in those older videos could get to be a little grating after a while, but this is already so much better. Can’t wait to see more
