Most of the Italians I know (i am italian and i live in Italy, so they are many) don't even put this much effort. They get wrong the soffritto, they let the meat cook for too little time and they never cut It with the knife, but they use store bought ground beef. Dude, I gotta tell you, you did better than my grandma!

I've made this recently. My only shortcut was buying homemade tagliatelle from my city's Little Italy. Made the ragù from scratch using Mario Batali's recipe, though (swapped out the milk Batali says to use for heavy cream, but not as much of it). So good.
