soft sandwich loaf:
3/4 c (170g) water, warm
2 tbsp (16g) milk powder
2 tsp (6g) instant yeast
2.75 c (385g) AP flour
2 oz (57g) butter, softened
1 egg
2 tbsp (25g) sugar
1 tbsp (8g) salt, kosher diamond crystal
(If using table salt, use 1.5 tsp)

Bake at 375F until golden brown. For minis, start checking after 20 min. For full size, start checking after 30 minutes.

I've baked bread several times and it has never come out quite right. It proves well, but it never rises in the oven. I'm not sure where I'm going wrong?

Can’t you also let rise in the fridge for 1 and half hour to 2 hours to let the yeast build that structure? 🤔

I’m still trying to figure out how to make the super soft bread from tours les jours. It’s shaped like a baguette, super pale in color, filled with flavored whipped cream, and is extremely airy and soft.
Do you have any clue how they make it? I can make very soft milk bread but it isn’t the same.
