Perfect timing! I started making and drinking kefir just four months ago. At that time, my T2 diabetes has been well managed, with an A1C of 5.3 maintained for eighteen months with Mounjaro and Farxiga. Two months ago I went off the Farxiga with no repercussions at all. In fact, my glucose readings have been lower than ever, with morning testing very often in the mid-90s! So I am optimistic the next A1C test will be even lower even with going off one medication. And the ONLY difference is the daily “dose” of kefir. No other changes in diet or exercise.

My only thing is my system prefers to have kefir in the morning, either as a drink (plain or in a protein smoothie) or strained to make cheese to spread on toast. Ingesting kefir in the evening interrupts my sleep. I’m better off with magnesium glyconate.

But including kefir in one’s diet is great! And as the kefir feeds on lactose, much is digested in the process of fermentation so many people who are lactose intolerant can ingest small amounts safely.

Kefir is fermented with the help of a type of fungus, not bacteria. In northern Europe we ferment milk with these lumps of this almost translucent fungus at home. It has the consistency of dense gelatine. We keep the fungus in the fridge and it grows with use. So we give away parts of fungus to family and friends. Kefir is very healthy and popular. I wish I could make my own in South Africa where I now live.

Can kefir raise glucose? I understand it can lower it, but I did start drinking it four nights ago and my glucose is up. I've also gained a couple of pounds quickly. Is this normal and it will be better soon?

My IBS-D seems slowing down because of Kefir. I take it before bed and again late
