The BEST Italian Dish You've NEVER Heard Of!

Cheese and potatoes time ragazzi! Friuli Venezia Giulia (where Alessio is from) is famous for this delicious Italian recipe, but the shocking thing is, most people have never heard of it. Frico was first developed as a hearty meal to help use up leftover Montasio cheese. We didn’t have access to Montasio here in the US, so we substituted in piave and Gruyère cheeses.

Fun fact: Chef Luca Manfe made frico during his competition on Masterchef, impressing Gordon Ramsay and going on to win!

From Google: Montasio, an aged cheese, boasts an aromatic bouquet and fruity, grassy notes. It was first made by monks from the milk of cows that graze in the foothills of the Alps. Hundreds of years later, the “recipe” is almost the same. In fact, in 1986, Montasio was awarded protected designation of origin (DOP: refresh your certification expertise here), cementing the production methods. After being brined and salted, Montasio is aged for a minimum of 60 days (and up to more than 18 months), allowing the flavors to intensify over time.

I'm definitely going to try to make this. I'm native American and live on the reservation my husband and children are all native as well. My hubby knows my dream is to visit Italy and to eat some real Italian food. It's on my bucket list and one day I'm hoping this dream can come true.

Omg! My Irish great grandmother fell in love with (and often traveled to) Italy in her younger years. She passed in 2012. But she would make a dish she called “cheese potato “ which was thin slices of potato and onion layered with parm & Gruyère and cooked until a crispy golden brown. I’m realizing now that she was probably trying to make Frico! Thanks for sharing this recipe. I love making my grandmothers version, but will definitely try the Friul way ❤️

I cried for almost 2 yrs missing my family when l migrated to Australia and food was so difficult in 1978. Our trips to Sydney was the highlight of my life getting ingredients to cook Malaysian food. So l feel for Alessio and his homesickness.

Hi Jessi&Alessio, I have been living in Germany for almost nine years and I am originally from South Carolina. The winter is the hardest time of the year for me, especially in our area, which my husband calls Deutsche Suppe.-German Soup.He goes out of his way to spoil me during those times when I am super homesick and can make fantastic pulled pork BBQ and takes me to Düsseldorf to a place that makes some of the best Nashville hot fried chicken I have ever eaten😊. Thank you for sharing your recipe for Frico we both love Kartoffeln and will be adding this to our recipes we need to try list.

Great vid! It make me smile when Alessio named the "Sagra del frico di Carpacco" because I went there last summer (I am from the neighbour region of Veneto) after I heard they made the best frico in Friuli, and they were right one of the best I had!

My family is from Udine! It's so cool to see someone from the region online because I know very little about it! Someday, I hope to visit my family and eat all the food! I will try to make frico this weekend. Thanks for showing us how!

I know how Alessio feels about homesickness. It reminds me of my maternal grandpa that I've never met (as he died before I was born) but heard stories about from my mom. My maternal family from Cuba first came to the NY metro area before the Cuban Revolution, as they didn't like Batista. They lived in New Jersey but until the early 70s, as my maternal grandpa felt homesick as he missed Cuba's weather, so he wanted to move to Miami as it was the most like Cuba.

So they ended up moving down there, and although they liked Calle Ocho, my mom said they felt isolated as they had to do everything by car. The family ironically felt homesick for the NYC metro, as they missed the walkability and transit freedom that the NYC metro area had (this was before Miami even had transit). My mom also hated the warm weather and preferred NYC's cool climate. So they ended up moving back to the NYC metro. Where she would live in Rego Park, Queens and the Upper West Side (when those areas were still cheap), meet my father, and would have me in the early 2000s.

Ok I made this tonight and it came out great. My wife loved it and wants it again. I had the same problem with the pan burning and had to use a second pan. Thanks!

Found a listing for this cheese on Amazon with the following information “Montasio is a pasture-terraced mountain located in the northeast of Venice in the Friuli Venezia region of Italy. The cheese Montasio was originally made by the monks who occupied the monastery that owned those pastures in the thirteenth century. Today the Cheese is DOP, which means it's properties and production are protected by law. Made in Large wheels, the flavor is nutty, and slightly fruity.”
