I’ve had beef tripe, it’s okay, nothing special. Just chewy without much flavour by itself, nice tenderised and in a stew it soaks up the sauce, kind of like a light liver flavour with the texture of overcooked pasta. Pain to cook correctly though, undercook it and it’s tough, overcook it and it becomes almost gelatinous.
