In Italy most recepes are unheard of by most of the populations because there are thousends of Little Villages, each One with some unique traditions

That’s interesting because here in the southeastern US, we use vinegar based BBQ sauces on pork, so this is basically Italian BBQ to me! Gotta try it

Paprika enhances ANY savory dish like crazy, you can put it into just about anything and it'll be even better. If you have different types of paprika like smoked paprika (which is even better than regular IMO) or Hungarian paprika, you can take it further and get a crazy depth of flavor.

My parents were both born just outside of Campbasso. My relatives all mostly since passed on, raised their own hogs. This is exactly how they would prepare fresh pork after they slaughtered their hogs.

It’s because that region has many foreigner Italians. What I mean by that is Croats moved in Long time ago, this dish is actually theirs.

I always think it's funny when you find an alternate use for a traditional recipe, like you did with your sandwich. Where I used to work did Lamb on the first Sunday of every month, and one day when I was eating some leftovers I thought to myself this would go really good on a taco, so I got some standard taco ingredients and made lamb tacos. They were honestly incredible

you HAVE TO massage the garlic with olive oil into the slits so the garlic gets "Butter-Nuttery"... and dont massage the spicy paprika powder into the slits, it will dry out the garlic oil mixture.

i FRICKING LOVE that recipie and have eaten it in italy - good choice on the shoulder too

My grand made this! They were from Campobasso. The next day a sandwich on toasted sourdough with pickled onions is the best part.
