Making the Perfect 'Pizza' Dough - Pizza dough recipe

Hi everyone, Pat here!

Today I will show you how to make your own perfect "Pizza" bases. Again its a long proving time so best make these in the earlier for dinner. Left over dough can be kept in the fridge for a few days in sealed container or freeze ( but if freezing best to shape the dough ands freeze).

Pizza Dough

• 1kg - 1.6kg Plain flour (00 Flour would be best)
• 1 Litre water
• 50 grams salt ( dissolve in with water)
• 2 grams instant yeast
• 20 grams sugar ( I used caster sugar)
• 50 grams Extra virgin olive oil
****Optional Biga ( 2 Tablespoons) - please look at my Biga video

Will yield 8 - 10 pizza bases ( 250g per base approx open to 28 - 32cm diameter).
Mix all ingredients as per video
First rest 20mins
Second rest 6 - 8hrs.

Thats more likely professional way procedure, i made pizza dough every week, but i love the way you fo it,
