Pan seared ribeye steak. Decided to try out my new stainless steel pan, right after seasoning it. Pulled the steak off at 125 internal temperature.

You couldn’t stand it on the fat cap first to really melt it and tender it? And even with those weights… you couldn’t get a proper crust?
