My favorite is a quick 2-4 hour dry brine (salt and brown sugar)

Rinse off the excess, pat the salmon dry, then brush a light coating of your favorite teriyaki sauce on the fish.

Then throw it on the smoker at 200 until it hits 128-130 and let it rest for 10 mins in a cold oven.

Sprinkle it with sesame seeds and garnish with green onion. Serve it with warm sushi rice, Kim chi, and pickled daikon radish. Home made spicy Mayo on the side if you’re into that kinda thing.

I came home from work and there was a whole fillet of salmon on the counter. My wife had it smoked in the same smoker they smoked brisket in. I’m not lying, it was the best thing I ever ate. Better than any t-bone, ribeye or beef filet.
