RECIPE:
Start with a 16 oz tub of oysters, drain and rinse well.
Cover with half and half or butter milk, add at least 1 tbsp.
hot sauce. Refrigerate over night or at least 8 hours.

The next day drain off excess milk but do not rinse with water.

Dredge in a mixture of:
2 cups all purpose flour
1/2 cup corn starch
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. Cajun seasoning

Deep fry in 350 degree oil for 2 minutes or until golden brown.
Drain on paper towel for 3 to 5 minutes before serving.

Make a dipping sauce with 1/2 cup ranch dressing and
1 tsp. sriracha sauce. Mix with your finger! Lol

I used your recipe/method, I did however tweak it a little by substituting about 1/2 cup of the flour with a seafood breading mix and added a dash of seasoning salt with the salt and pepper, it was PERFECT. I will be using this again, might even try it to fry some chicken fingers.

Adding any seasoning to an oyster is taking the oyster flavor away, take the oyster right out of the liquor and roll in your favorite flour or corn meal and fry.
