I've made the mushroom quiche a few times, first time followed the recipe to the book, second time I added spinach that added a nice flavor, another time I added Canadian bacon, each time it was a hit with the family, note that I've substituted half & half for whipping cream and I've added mozzarella to gruyere for a nice balance. This is now my go to recipe for quiche, thank you.

What I love about quiche is you can pretty much make it with anything you like 👍🏻 I’m a fan of cheese, cherry tomatoes and red onion, tasty and cheap ingredients ♥️

I've been making quiches for 30 years, and I've never once blind baked them first. I use a pate brisse recipe similar to yours but with an egg, and it cooks perfectly with the liquid egg mixture, is foolproof and never soggy. Not having to blind bake makes the whole process much easier, imo.

Great recipes! I tried a spinach quiche and it tasted very good.
I also added some Parmesan cheese to the crust. Cheese makes the crust even more delicious)
