To Make Crispy Fried Eggplant
Eggplant - 2 Nos
2 Tbsp - Corn Flour
Sweet And Spicy Sauce - 2 Tbsp
Soy Sauce - 3 Tsp
Vinegar - 1 Tsp
Oil - 1 Tbsp
Garlic - 1 Tbsp
Ginger - 1 Tbsp
Red Chilli - 5 Nos
Coriander Stocks
Sesame Seeds
Water
Method
1. Take two large egg plants, remove the seeds and cut into wedges.
2. Transfer it to a bowl, add 2 tsp of water and mix.
3. Add two tsp of corn flour, coat the egg plant pieces with the flour.
4. Deep fry the wedges in hot oil till you get a golden brown colour.
5. To a small bowl, add 2tbsp of sweet and spicy sause or ketchup, 3 tsp of soya sause, one tsp of vinegar, one tbsp of water and mix all well.
6. To a wide kadai, add one tbsp of oil, one tbsp of finely chopped garlic, one tbsp of finely chopped ginger, five to six red chillies cut into two.
7. Add the sause mixture and mix everything well.
8. Once the sause is thickened, add the fried egg plants and few coriander stocks and mix well.
9. Add some sesame seeds and mix together.
10. Crispy egg plant fry is ready to be served nice and hot.
