Crispy fried eggplant in the shape of calamari 🦑

Batter: 2 large eggs, 1/2 tsp salt, pepper x3, beat eggs, then add 100g cornstarch, mix well. Brush the batter on eggplants. Coat with breadcrumbs.

Spray some oil of your choice on both sides. Air fry at 375F for 10 minutes. Or bake at 390F for 15 minutes. Observe as you bake them, avoid overcooking.

I also tried to deep fry one. But it actually tasted no difference from the air fried one. So I’d recommend baking/air frying instead, healthier.

For the sauce, I used okonomiyaki sauce cuz I had that in the fridge. It paired very well with fried eggplants. 😋
