I know you did this video a year ago, but I’m a 67 yr old grand mom that decided I wanted to conquer the “Sour dough” challenge! I’m love baking…..it’s a release for me. I must of Read and watched hundreds of YouTube videos and directives on how to do sourdough starter and sourdough bread. And I am here to tell you young ladies that your video and directives were the absolute best! Easy to follow right to the point and your recipe for sourdough bread worked perfectly and it turned out gorgeous when I baked it! Thank you thank you thank you so much. Never let it be said that an “old dog”can’t learn a new trick from a “Young pup”!

It's been about 5 months however,
• Feed mature sourdough starter overnight 6-8 hours  before use

•  400 g 1¾ cups warm water

• 100 g ½ cup mature starter

• Dissolve starter with water

• Add 400g/ 3cups bread flour + 100g  ⅔ cups whole wheat flour

• Mix/ squish through fingers

• Rise for 1 hour (cover with damp towel)

• Add 10g (1tbsp+¼tsp) salt

• 10g 1tbsp water

• Mix

• Dip hands in water to stretch and fold. Rotate bowl (quarter turn), do it 8 times .

• Pick dough up, turn it over, tuck edges under, clean sides

• Rise for an hour

• Repeat fold ×8

• Flip over, tuck under and clean bowl

• Rise for an hour

• Repeat fold ×8

• Flip over, tuck under and clean bowl (last time)

• Dip hands in water, pick dough, fold under itself ×7 max (180 turn)

• Set on table

• Lightly sprinkle with flour

• Use bench scraper or spatula to scoop dough towards yourself.

• lightly sprinkle with flour, cover and let it rest for 30-40 mins.

• Scrape under it and flip over.

• Pull in  opposite sides (like wrapping present), 12-6, 3-9 .

• Then the edges (diagonally), pinch to close

• Lay face down in bowl

• Cover with towel

• Place in fridge overnight

• Preheat baking vessel 500⁰F /260⁰C for 30 mins

• Place parchment paper over dough & flip over

• Score dough in swift movements

• Place in baking vessel with parchment

• Bake for 25 mins at 500⁰F /260⁰C  with lid on

• Bake for 15-20 mins at 450⁰F/ 230⁰C with lid off.

• Place on cooling rack to cool

• To make sure it's done tap bottom and listening for a hollow sound

• Let cool before cutting or  bread will squish.

I waited almost a whole week for this video and I'm so glad its here! My starter based off of the first video is now 5 days old and I'm SO excited. I've been feeding this thing like its the most precious thing to me. I've also been checking on its growth every few hours... I may be going crazy during quarantine, but at least I'll be crazy with sourdough!

i've been growing my starter for weeks and watching EVERY video and reading geeky sourdough forums and getting *way* too obsessed with being perfect even before i actually bake... it's been a bit mad. so this video is the final kick-off, it's friendly and simple enough and feels like we're all just a bunch of friends baking together. i hope mine is as successful as everyone else's!

1st time baking bread and it came out beautifully. I didn't have a large enough ovenproof lidded item for the bread to cook in but I did have a oven proof wok and that worked

I made this bread this morning and it tastes delicious. I was worried that my starter wasn't growing, but on day 6, it floated! My bread had lots of air bubbles in it which was great, I made one error though, I think my dough should have been in the refrigerator for longer than 6 hours. When I scored the top of the bread it healed itself so the bread didn't rise as much as it should have. All is good though, it has a wonderful texture and flavor and my husband loves it. Thanks~!

I began my sourdough starter two weeks ago; I baked my very first loaf of bread today and it tastes incredible. The process is indeed long, but long doesn't mean difficult so if you want to try it please don't feel put off by the duration of it all! It takes maybe 2 min to feed your starter each day and I must have spent 30 min strictly taking care of my dough (I didn't follow this recipe) the rest of the time it was just rising and doing its own thing.

My dad has been making sourdough bread since I’ve been alive, it’s SO GOOD and he’s amazing at it, you should have it dipped in olive oil mixed with, salt and your favorite spices we love dill! There’s also so many things you can make with sourdough discard and starter! We’ve tried, pita bread, waffles, pancakes, cinnamon buns(MAKE SOURDOUGH CINNAMON BUNS) biscuits(these were the hardest to master) pancakes, and of course a LOT of bread!! Have fun and give sourdough a try(so good)

Oh my goodness! I was so scared of starter and making sourdough but this video was perfect! It came out SO well! Everyone loved it and I was a little sad that it was eaten so quickly! (On a side note, when you feed that starter, don’t through the extra away! Put oil in a pan, med/high heat, toss some onions or spices on top, fry it like a pancake until browned and it is SO good!)
