Thats not medium high. That cant be. Whenever i set my electric to medium high my atainless steel pans start smoking and i burn whatever im cooking. Clarify chef john

I’ve never understood hot meat on a cold salad. Not the contrasting temp/text combo like sushi. Just a hot piece of chicken on semi-warmed (from the chicken) romaine lettuce. Gross.
