How to make easy no knead bread / sourdough! (:

Any dutch oven with a lid works beautifully!

Ingredients:
430g bread flour (3.5cups)
390g water (1.5c + 2tbs)
12g salt (2tsp)
1/4tsp yeast

Use high gluten (bread flour) for best results and that chewy crumb!

Method:
- Mix everything together until there is no more visible flour
- Cover with a damp towel or plastic wrap.
- Ferment at room temperature for 12-18+hours (this loaf was 16hr)
- After the time, wet your hands and stretch and fold in all the sides.

- Move to parchment paper, seam side down. (this makes putting the bread in easier)
- Proof for 2 hours (i use the same bowl to cover it)
- Preheat your oven with your cast iron or dutch oven for 1 hour (450F)
- Dust the of your loaf with a little flour and cut straight down the middle. - You can use a scissor for this part too. This lets the steam escape in a controlled manner.

- Transfer your bread into your pan carefully.
- Bake Covered for 30 minutes.
- Take the lid off and bake uncovered for 25-30minutes more.
- Let it cool on a wire rack. Boom Bbby!!!! Nice job!!

The key to the crust is to bake it longer than you think. Your oven is going to be dark so the bread will look darker than it actually is. I usually go the full 30minutes.

For a funky sour flavor, let your dough cold ferment in the fridge for 3+ days. (after the initial 12-18hrs).
The wait is worth it!!

In case you didn't know (because I didn't know until a month ago), when someone says "check below" on a youtube short, you need to go to the video description by clicking the three dots in the UPPER RIGHT corner of the video.

It's confusing, since this is only formated this way on mobile youtube shorts, and there is a thing below the video that is descriptive, but is NOT the description.

So, yeah, the recipe is there, and I hope that helps.

Hey, so, this comment blew up, and I am glad this helped a ton!

For those saying that "clicking the title always shows me the description, what are you talking about", remember that the Youtube app tends to... not be the best. As of now (5 months after I originally made this comment), my version of the app has updated and *most of the time* shows the description upon clicking the title. But not all phones/devices are the same, some versions are going to be weird, and (let's be honest) the Youtube app is frequently a hot spicy mess. The "tap the three dots" is not only easier than clicking the title on a tiny screen, but is more consistent for me.

This recipe is amazing, comes out just like artisan bread. Sooo easy! Throw it together in 5 minutes literally then let rise then either bake or put in frig for up to 3 days. I've made it 3 times this week it's that easy. It doesn't last long cuz we eat it. So good!

Just attempted this. Did almost everything I could differently (only half the amount, ferment for only 10 hours, proof for 1.5 hrs) but it still turned out perfectly. Such a great, foolproof recipe! Thanks, Senpai.
