I used to cook this at an Italian restaurant. We used a thick french steel pan to render the guanciale then kill the flame and pull the pasta into the pan and add a ladle of the pasta water which cooled the pan and added some liquid. Then a large ladle of egg wash and toss toss and add a fist full of grana then on to the plate before it curdles. The timing has to be perfect or the dish is dead, but this is one of my favorite dishes.

I can’t tell you how happy I am to see these videos. This video was so relatable. My favorite part was the lighter and the saving the egg yolk. It shines through that you’re passionate about cooking. But your complaining as you cook and cussing was like watching myself cool some eggs lol. The food looked delicious and you were so funny and entertaining. I hope your channel gets more visibility! This looks delish. Another little tip to add-the egg separating can be done over a bowl and the whites can be put in the fridge and used for later instead of sending it down the drain.
