My recipe for roasted chicken is slightly different. I dry the hell out of that thing as I let it sit at room temp for an hour and cook it at 450. I then let it rest 15-20 minutes. You get perfectly crispy skin by drying it out. Got that from my Thomas Keller cookbook.

for new cooks and poor people, let it be known you can do all of this without the thyme, parsely, celery, etc. of course it won't be _as_ good but salt and pepper can carry it a long way. don't give up on these easy recipes when you are missing the extras

Also, one of the best possible options for meal prep. Take that whole chicken, shred it up and put it in salads, or cut it into chunks and serve with rice and veggies later. Delicious. Even better if you have a smoker to make it in.
