Great recipe!
After dinner, I poured the leftover stock and vegetables into a blender and made a puree. Then, I added the leftover roast and some frozen peas and had an amazing soup for the next few days!

For Absolutely the BEST fall apart, Juicy, Delicious stew or pot roast, my butcher of 55 years had told me the Best cut of beef fir those type of dishes is Shoulder. Its like the poor man's filet mignon!! Fantastic for braising!! Enjoy!!😉

I cook professionally and was given an instapot as a home gift and was wondering what I'm getting myself in to.

I'm a Swiss trained chef and I have to commend you on the nuances you added to this recipe.
I will also tell you that I looked for the shortest YouTube video I could find and it was yours.
There is a rule in culinary school that says the longer/ more complicated the recipe the higher the likelihood of it being nonsense.
(I hope Martha Stewart does not take that personally)
Well done by the way on drying the meat before browning, this is such a basic step that is overlooked by so many cooks in the US.

just made the recipe for this bit over 4 lb beef chuck had it for about 80 minutes came out so tender very delicious I appreciate the video and the recipe

I made this recipe over the weekend and my family loved it! Usually we have small portions but everyone went for seconds and ate way more than I expected! I cooked 3.2lb of beef for 62 min + 15 min natural release. I made a couple of substitutions based on what I had in the kitchen: I used 1 tbsp of Better than Bouillon + 3.5 cups of water instead of beef stock, white vinegar instead of apple cider vinegar, dried parsley instead of thyme and rosemary. I also skipped the celery and doubled the onions and bay leaves to better suit my family's palate. The onion added a WONDERFUL sweetness to the broth-- I was so worried that this would've been too salty for us but it turned out perfect! My pot was nearly full by the time I added the onions so I definitely wouldn't have been able to steam the potatoes at the same time. That was fine though, because I planned to make mashed potatoes separately anyway. :) Next time I'll prepare some broccoli as well. Thanks so much for the recipe!

This is my new go-to recipe for pot roast! I made this for dinner last night. It was so flavorful. The family absolutely loved it. I wouldn't change a thing. P. S. Don't skip on the gravy! So good!!!

Mine is in the Instapot right now!!! I’m a newlywed cooking a new dish for company for the first time 😅 thank you for such a simple and easy recipe to follow! I didn’t have any apple cider vinegar, so I mixed a bit of applesauce with white vinegar. Let’s see how it turns out!!!
