I haven't heard of a pesto made with carrot tops before. I also like the addition of walnuts. And the dogs are adorable.

I just did this last weekend! It’s so good! Great for dipping other veggies or flatbread into it too (I make mine with paleo flour)!

I made pesto from leftover broccoli and kale stems with garlic and walnuts and a good olive oil. We used it as dip for a day or so before I put the rest into icecube trays and froze it. Now I have portions of pesto whenever I want.

It tastes delicious btw. A bit spicier and chunkier that other pesto, but yummy!

yum! im always throwing the tops in EVERYTHING. broths, mixed with fried potatoes, top my noodles & rice, and i top my dogs food with it! but THIS (!) - never thought of it, im doing this one today! thx!

Sounds so good! My friend made a creative, vegan pesto just like you did. It was so flavorful, tangy, and aromatic. One pesto was made of 5 herbs in the mint family for pasta or sandwich spread. Can't remember which: basil, thyme, oregano, lemon balm, rosemary, sage, ...?

I coincidentally made carrot top pesto yesterday, but used pan roasted cashews instead of walnuts and added in some aged hard Gouda

I usually use cashews to make pesto, but I'm absolutely going to try walnuts next time. This is a really cool recipe

I love garlic scape pesto sooo much! I unfortunately don’t have a blender where I’m living right now (temporary) 😞 so I can’t make it

If you add a splash of pasta water to the pan with the pesto before the pasta and mix quickly for a few seconds it'll emulsify and become 10x creamier! )And then add the pasta and mix obv)

I've done this kind of thing when the most impressive growths in my radish garden were the greens. (Seriously like the twiggiest roots you've ever seen, ridiculous!) But oh my god was that good over pasta!
