Hey guys,
we don't throw away our carrot tops, we make pesto. Smoky carrot dip with carrot top pesto.

Ingredients:
1 bunch carrots with tops
Carrot top pesto//
Carrot tops
1 tsp salt
2 tbsp fresh mint
2 cloves garlic
1 lemon, zested and juiced
1/4 cup pistachios
1/4 cup olive oil
Carrot dip//
12 oz carrots
1 tsp smoked paprika
1/2 tsp cumin
2 tsp sherry vinegar
1 tsp soy sauce
2 tsp honey
2 chipotles with adobo liquid
2 tbsp almond milk

Preparation:
1. Preheat oven to 400F/200C
2. Remove tops from carrots and wash both thoroughly.
3. Cut carrots in 2 inch pieces and place on parchment lined baking sheet.
4. Season with salt and olive oil and roast for 30 minutes or until tender and lightly browned. Set aside to cool.
5. For the carrot top pesto - While carrots are cooking, in a food processor combine, carrot tops, mint, garlic, lemon zest and juice, salt, pistachios, and olive oil. Process until fully combined. Set aside and clean processor.
6. Once carrots have cooled, add to your food processor along with paprika, cumin, vinegar, soy sauce, chipotles and adobo and almond milk. Process until fully combined.
7. Garnish dip with carrot top pesto, paprika, shaved pistachio, and olive oil.
