Blending olive oil for a long time turns it bitter. So If you notice your pesto turning slightly bitter, try first blending it with a little bit of vegetable oil(to get the blending started) and when its almost done add your olive oil and only blitz it a few times or whisk it in by hand.

Since I am dairy free, I use a really good nutritional yeast with roasted garlic flavor. It’s not Parmesan, but it gets pretty darn close.
