Radish Kimchi 🔥
Part 1 to bossam
This is my quick and easy version of radish kimchi. You can eat this as a side salad with any meal or use it in replacement if kimchi.
What I like to eat it with is bossam. If you never had bossam it is a Korean dish that is served as a wrap. It usually consists of pork belly or shoulder braised in a broth filled with spices, sliced thinly, and accompanied with this radish kimchi.
It is a refreshing dish usually served with jalapeño slices, fresh garlic, lettuce, cabbage leaves, and a delicious fermented soy bean sauce Ssamjang (optional)
What you’ll need:
5 cups sliced Radish
3 tbsp Gochugaru (red pepper powder)
2 tbsp Coarse Gochugaru (coarse red pepper powder)
2 tbsp Rice vinegar
1 tbsp Sesame oil
1 tbsp Sweetener
Salt to taste
1 tbsp Fish sauce
4 minced Garlic cloves
1 jalapeño
2 sliced Green Onions
2 tbsp Toasted Sesame Seeds
(Adjust seasonings to your liking)
1. Salt radish heavily and let water release for 30min.
2. Rinse radish to remove excess salt.
3. To a bowl, add radish and seasonings.
4. Give it a mix and store in air tight container. Serve and enjoy!
