I like the overview of knives idea, but the overhead shot doesn't show much of how you are holding the knives or the different cutting techniques.

Are those Wüsthof Ikon knives?

If they are, then the blade length is printed on the blade, so you can use them for measuring.

For chives i prefer a long blade, slicer, chef knife..as long as you go long strokes you can do a way bigger portion per cut.

"Not much you can do because it's mackerel." she says. You can make about 5 different styles of fermented seasoning and fish stock out of it. I have a gallon jar of fish sauce made from Mackerel, salt, and spices sitting on my counter. If I were to add tamarind and molasses to it, it would effectively be worchestershire sauce. You skim off the (very bad smelling) oil as it floats to the surface and use it for feeding ducks and chickens. Of course you have to have the guts and spinal column or it won't ferment properly.

Your clearly a talented chef, But one of my favorite things about watching chef Jack Chaplin (Daddy Jack) is his refusal to waste perfectly good food just to make a presentation... You waste so much food in this video just to make it pretty... sad
