Ingredients:
•2 tablespoons olive oil
•2 pounds chicken
•1 teaspoon white pepper
•4 bell peppers (your choice of type)
•2 onions
•2 tablespoons chili powder
•2 tablespoons cumin
•1 ½ tablespoons oregano
•30 ounces diced tomatoes with green chilies
•1 cup chicken stock
•1 ½ cups heavy cream
•1 ½ pounds spaghetti
•2 cups shredded cheese (your choice of type)
Directions:
•Cut the chicken into cubes.
•Slice the bell peppers and set aside.
•Slice the onions and set aside.
•Over medium-high heat, warm up a pan with the olive oil in it.
•Add the chicken and white pepper and cook until the chicken is white to golden brown.
•Add the bell pepper and onion slices and cook with a lid over the pan until the vegetables are soft.
•Stir in the chili powder, cumin and oregano.
•Stir in the diced tomatoes.
•Stir in the chicken stock.
•Stir in the heavy cream.
•Let cook with the lid on for 5-7 minutes and then let cool with the lid off.
•While the chicken mixture is cooking, boil the spaghetti (for instructions, see How to Make Spaghetti Carbonara).
•Once the spaghetti has cooked, drain and pour it into a large bowl.
•Pour the chicken mixture into the large bowl containing the spaghetti.
•Stir everything together.
•Stir in the shredded cheese.
•Serve when ready.
