Ingredients (4 Servings)
Fajita Seasoning Mix (1x)
- 1 Tsp Salt
- 1 Tsp Oregano
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Paprika
- 1 Tsp Chilli Powder
- 1 Tsp Cumin
Chicken Marinade
- 750g Cubed Raw Chicken Breast
- 1.5x Fajita Seasoning Mix
- 2 Tsp Olive Oil
- 1 Whole Lime Juice
- 20g Light Butter (for cooking)
Fajita Mac n Cheese
- 1/2 White Onion finely chopped
- 1/2 Red Onion finely chopped
- 1/2 Red Bell Pepper finely chopped
- 1/2 Green Bell Pepper finely chopped
- 280ml any milk of you choice
- 150g Light Cream Cheese
- 35g Light Cheddar grated
- 35g Mozzarella
- 240g Uncooked Macaroni / 530g Cooked Macaroni
- 1/2 Lime Juice

Important Cooking Notes
- When seasoning the chicken, make sure it’s well seasoned by adding more spices if needed
- Cook the chicken on medium heat for 6-8 mins till golden brown then set aside
- Cook the onions and peppers for 5mins at least till soft and fragrant
- When adding the milk and cream cheese make sure the heat is on LOW to prevent the creamy sauce from splitting
- Cook the macaroni in boiling water for 7-8 mins then drain and remove
- After adding the macaroni and chicken back in the pan, give it all a final mix till well combined
- Best to reheat this in a microwave or a pan with a splash of milk to make it creamy again!
