Ingredients:

2 large boneless skinless chicken breasts, cut into fine strips
2 tablespoons oil for frying
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon chilli powder
1 teaspoon cumin
1 teaspoon oregano
2 cups penne pasta, uncooked
1 small red onion, sliced
1 small red bell pepper, julienned
1 small yellow bell pepper, julienned
1 small green bell pepper, julienned
4 cloves chopped garlic
1 medium can of diced tomatoes, herb and garlic
1 cup heavy cream
1⁄2 cup Parmesan cheese, for topping
2 tablespoons chopped cilantro for garnish

Well now I am going to have to make this - it looks absolutely delicious! I think any other meat like beef or pork could be substituted too. By the way I made your last recipe last night the pork chop with mushroom gravy and it was very good. Had some leftovers for another night. Looking forward to that again.
